I was reading that the PC version of the game will be mod friendly and that cross-platform multiplayer will be available (correct me on either of those if they've changed). I was wondering what happens if I get the Switch copy, and a friend of mine gets the PC copy but decides to mod his game. Will I be able to mod using the Switch? Or will his modded game and my vanilla game be incompatible for multiplayer?

It is highly likely mods will not be supported by the Switch version of the game.
While the developers have stated they are planning on implementing Cross-platform play, it's still a maybe for some platforms. Cross-platform play is not compatible with mods.
